Ingredients

For the toast

  • 2 slices thick slices sourdough or seeded whole grain Cut to about 3/4 inch thick.
  • 1/2 cup full-fat (4%) cottage cheese Full-fat option provides better texture.
  • Olive oil For drizzling on top.
  • Salt, cracked black pepper To taste.
  • Optional toppings: chives, dill, red pepper flakes, hot honey, sliced tomato, avocado Add according to preference.

Method

Preparation

  • Preheat the air fryer to 375°F (190°C) for 3 minutes.
  • Optional: Blitz the cottage cheese in a small food processor or mash it hard with a fork for 30 seconds for a smoother spread.

Cooking

  • Spread the cottage cheese onto the bread, pushing it right out to the crust.
  • Season with salt, pepper, and drizzle olive oil over the top.
  • Air fry for 6 to 8 minutes until the surface is golden and the edges are dark.
  • Add herbs and optional cold toppings immediately after removing from the air fryer.
  • Serve hot, ideally standing up in the kitchen.

Notes
