Ingredients
Asparagus Bundles
- 18 medium spears medium asparagus spears, trimmed Trim the woody ends
- 6 slices beef bacon
- 1 tbsp olive oil
- 0.5 tsp freshly ground black pepper
- 0.25 tsp garlic powder
- 0.25 tsp smoked paprika
- 1 pinch kosher salt
- 1 tbsp grated Parmesan cheese Optional, for serving
- 1 cup lemon wedges For serving
Method
Preparation
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- Rinse the asparagus and trim the woody ends. Pat them dry thoroughly.
- In a large bowl, toss the asparagus with olive oil, black pepper, garlic powder, smoked paprika, and a pinch of salt until they are evenly coated.
- Divide the asparagus into 6 bundles, each using 3 spears.
- Wrap each bundle tightly with a slice of beef bacon, securing the ends underneath.
Roasting
- Place the bundles seam-side down on the prepared baking sheet.
- Roast in the oven for 18–20 minutes, or until the bacon is crisp and the asparagus is tender.
- If desired, sprinkle with grated Parmesan and a squeeze of lemon juice before serving.

Notes
