Ingredients
For the Beef Filling
- 1 pound 90/10 ground beef Lean ground beef recommended for better texture.
- 1/2 medium onion, finely chopped Can also use a yellow or white onion.
- 2 tablespoons taco seasoning Store-bought or homemade seasoning.
- 2 tablespoons tomato paste Adds moisture and flavor to the beef.
- 1/4 cup water or beef broth Use as needed to keep the mixture moist.
- to taste Salt Season according to your preference.
For Assembling the Tacos
- 8 (6 inch) taco-sized flour tortillas Can substitute with corn tortillas if desired.
- 2 to 3 cups mozzarella cheese, shredded Offers a gooey, melty texture.
- as needed tablespoons Avocado or vegetable oil For frying the tacos.
- to taste Fresh cilantro, finely chopped For garnish.
Method
Preparation
- Heat about 1 tablespoon of oil in a large skillet over medium heat.
- Add the chopped onions and cook until softened, about 2-3 minutes.
- Stir in the ground beef and break it up with a spoon. Cook until mostly browned, about 4-5 minutes.
- Add the tomato paste and taco seasoning. If the mixture seems dry, stir in water or beef broth. Cook until the beef is fully cooked and most liquid has evaporated, about 3-4 minutes. Season with salt if necessary and remove from heat to cool slightly.
Assembly and Frying
- On a clean surface, lay down a tortilla. Add about 1½ to 2 tablespoons of mozzarella cheese to the top half of the tortilla. Spoon some beef filling on top and add more cheese.
- Fold the bottom half of the tortilla over the filling and gently press it down to seal.
- Place the assembled tacos on a large baking sheet and repeat with the remaining ingredients.
- In a large skillet, heat about 3-4 tablespoons of oil over medium heat. Fry the tacos in batches for about 1 minute on each side or until they are golden brown. Transfer them to a wire rack over a baking sheet to let them cool slightly.
Serving
- Garnish the tacos with fresh cilantro and serve immediately while hot and crispy. Enjoy!

Notes
If you have leftover tacos, store them in an airtight container in the fridge for up to 2 days. For maximum crispiness, store the beef filling and tortillas separately. Reheat the beef filling in a skillet and assemble just before serving.
