- 4 pieces chicken breasts Boneless and skinless preferred
- 1 cup sundried tomatoes in oil, drained and chopped Use good quality for better flavor
- 1 cup heavy cream Can substitute with coconut milk for a lighter version
- 1 cup chicken broth
- 1 teaspoon garlic powder Adjust to taste
- 1 teaspoon onion powder Adjust to taste
- 1 teaspoon Italian seasoning
- to taste Salt and pepper Adjust according to preference
- to garnish Fresh basil For garnish
Method
Preparation
- In a slow cooker, combine the chicken breasts, sundried tomatoes, heavy cream, chicken broth, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Stir until the chicken is well coated in the sauce.
Cooking
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender.
- Once cooked, shred the chicken in the sauce if desired.
Serving
- Serve over pasta, rice, or mashed potatoes and garnish with fresh basil.

Notes
To store leftovers, let the chicken cool completely, then transfer it to an airtight container. It can be kept in the refrigerator for up to 3 days, or frozen for up to 3 months. Thaw in the refrigerator overnight before reheating.
