Ingredients

Meatball Mixture

  • 1 pound ground beef
  • 1 pound ground pork
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Cooking Liquid

  • 2 cups beef broth
  • 2 cups caramelized onions (store-bought or homemade)
  • 1 cup shredded Gruyère cheese (or Swiss cheese) Add just before serving

Method

Preparation

  • In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, eggs, Parmesan cheese, chopped onion, minced garlic, Worcestershire sauce, thyme, salt, and black pepper.
  • Mix until all ingredients are well combined.
  • Shape the mixture into meatballs, about 1 inch in diameter.
  • Place the meatballs in the crockpot.
  • In a separate bowl, mix the beef broth and caramelized onions together, then pour it over the meatballs in the crockpot.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • About 15 minutes before serving, sprinkle the shredded Gruyère cheese over the top and cover again until melted.
