- 4 pieces boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup barbecue sauce
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon minced garlic
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Chopped green onions for garnish
Method
Preparation
- Place the chicken breasts in the crockpot.
- In a bowl, mix together the pineapple chunks, barbecue sauce, soy sauce, brown sugar, minced garlic, ground ginger, salt, and pepper.
- Pour the mixture over the chicken breasts.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fully cooked and tender.
- Shred the chicken with two forks and mix it with the sauce in the crockpot.
Serving
- Serve over rice and garnish with chopped green onions.

Notes
