  • 4 pieces boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup barbecue sauce
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Chopped green onions for garnish

Method

Preparation

  • Place the chicken breasts in the crockpot.
  • In a bowl, mix together the pineapple chunks, barbecue sauce, soy sauce, brown sugar, minced garlic, ground ginger, salt, and pepper.
  • Pour the mixture over the chicken breasts.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fully cooked and tender.
  • Shred the chicken with two forks and mix it with the sauce in the crockpot.

Serving

  • Serve over rice and garnish with chopped green onions.

Notes
