- 1 lb chicken breast Can use frozen if needed.
- 4 cups chicken broth Homemade broth is recommended for richer flavor.
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion diced
- 2 cloves garlic, minced
- 2 lemons juiced Do not skip for the bright flavor.
- 1 tsp thyme
- Salt and pepper to taste
- 2 cups spinach or kale Add during the last 30 minutes of cooking.
Method
Preparation
- Place the chicken breasts in the crockpot.
- Add the diced carrots, celery, onion, and garlic.
- Pour in the chicken broth and the juice of the lemons.
- Season with thyme, salt, and pepper.
Cooking
- Cook on low for 6-8 hours or high for 3-4 hours.
- During the last 30 minutes, add spinach or kale.
- Once cooked, shred the chicken and stir everything together before serving.
