Ingredients

Main Ingredients

  • 1 lb chicken breast Can use frozen if needed.
  • 4 cups chicken broth Homemade broth is recommended for richer flavor.
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion diced
  • 2 cloves garlic, minced
  • 2 lemons juiced Do not skip for the bright flavor.
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 cups spinach or kale Add during the last 30 minutes of cooking.

Method

Preparation

  • Place the chicken breasts in the crockpot.
  • Add the diced carrots, celery, onion, and garlic.
  • Pour in the chicken broth and the juice of the lemons.
  • Season with thyme, salt, and pepper.

Cooking

  • Cook on low for 6-8 hours or high for 3-4 hours.
  • During the last 30 minutes, add spinach or kale.
  • Once cooked, shred the chicken and stir everything together before serving.
