Ingredients

Main ingredients

  • 1 pound ground beef Can substitute with ground turkey or chicken.
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning Use spicy taco seasoning for a spicier version.
  • 2 cups shredded cheese Try different types of cheese for a twist.

Toppings and sides

  • 1 bag tortilla chips Flavored tortilla chips can be used for variety.
  • 1 sour cream (optional) For serving.
  • 1 chopped green onions (optional) For serving.

Method

Preparation

  • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • In a crockpot, layer the cooked beef, black beans, corn, diced tomatoes, and taco seasoning. Stir to combine.
  • Top with layers of tortilla chips and cheese.

Cooking

  • Cover and cook on low for 4-6 hours or until cheese is melted and bubbly.

Serving

  • Serve garnished with sour cream and chopped green onions, if desired.

Notes
