Ingredients

Meat and Seasoning

  • 1 pound ground beef Can substitute with ground turkey or chicken.
  • 1 package taco seasoning Use spicy seasoning for extra kick.

Pasta and Base Ingredients

  • 2 cups pasta (elbow or rotini) Can use gluten-free pasta.
  • 1 can diced tomatoes With green chilies, optional.
  • 2 cups beef broth Chicken broth can be used as an alternative.
  • 1 can black beans Drained and rinsed, optional.
  • 1 cup corn Optional.

Finishing Touches

  • 1 cup shredded cheese (cheddar or Mexican blend) Add 30 minutes before serving.
  • to taste Salt and pepper

Method

Preparation

  • In a skillet, brown the ground beef over medium heat and drain excess fat.
  • Stir in the taco seasoning.

Cooking

  • In the crockpot, combine the seasoned beef, pasta, diced tomatoes, beef broth, black beans, and corn.
  • Stir well and cover. Cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, stir in the cheese until melted and fully incorporated.
  • Season with salt and pepper to taste, and serve warm.
