Ingredients
Meat and Seasoning
- 1 pound ground beef Can substitute with ground turkey or chicken.
- 1 package taco seasoning Use spicy seasoning for extra kick.
Pasta and Base Ingredients
- 2 cups pasta (elbow or rotini) Can use gluten-free pasta.
- 1 can diced tomatoes With green chilies, optional.
- 2 cups beef broth Chicken broth can be used as an alternative.
- 1 can black beans Drained and rinsed, optional.
- 1 cup corn Optional.
Finishing Touches
- 1 cup shredded cheese (cheddar or Mexican blend) Add 30 minutes before serving.
- to taste Salt and pepper
Method
Preparation
- In a skillet, brown the ground beef over medium heat and drain excess fat.
- Stir in the taco seasoning.
Cooking
- In the crockpot, combine the seasoned beef, pasta, diced tomatoes, beef broth, black beans, and corn.
- Stir well and cover. Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the cheese until melted and fully incorporated.
- Season with salt and pepper to taste, and serve warm.
