Ingredients

Main Ingredients

  • 1 cup strawberries, hulled and sliced
  • 1 large English cucumber (or 3 Persian cucumbers), thinly sliced
  • 1/4 cup crumbled feta or goat cheese (optional) Can be substituted with a dairy-free option
  • 2 tablespoons chopped fresh mint or basil Using a combination can enhance flavors
  • 2 tablespoons slivered almonds, sunflower seeds, or walnuts (toasted, optional)

Dressing

  • 1 tablespoon fresh lemon juice or balsamic vinegar
  • 1 teaspoon honey or maple syrup Adjust more or less based on sweetness preference
  • 2 tablespoons olive oil

Method

Preparation

  • Wash and dry the strawberries and cucumbers. Hull and slice the strawberries. Thinly slice the cucumbers into rounds or half-moons.

Mix Dressing

  • In a small bowl or jar, whisk together lemon juice, honey, olive oil, salt, and pepper. Adjust to your taste.

Assemble Salad

  • In a large mixing bowl, combine the cucumbers, strawberries, herbs, and cheese (if using).

Toss Salad

  • Drizzle with half of the dressing and gently toss to coat everything without crushing the fruit.

Garnish & Serve

  • Transfer to a serving platter. Sprinkle with nuts or seeds and additional herbs. Drizzle with the remaining dressing and serve immediately.
