Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • ½ cup chicken broth
  • 6 slices cooked bacon, crumbled
  • 2 pieces green onions, chopped (for garnish)

Method

Preparation

  • Season the chicken breasts with salt and pepper.
  • Place the chicken in a slow cooker. Add the chicken broth and cover.

Cooking

  • Cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender.
  • Remove the chicken from the slow cooker and shred it using two forks.

Mixing Ingredients

  • In a bowl, mix the softened cream cheese and ranch seasoning until smooth.
  • Return the shredded chicken to the slow cooker. Add the cream cheese mixture and shredded cheddar cheese.
  • Stir until the chicken is well-coated with the creamy mixture.
  • Fold in the crumbled bacon and let it heat for an additional 10-15 minutes.

Serving

  • Serve the dish warm, optionally over a bed of steamed vegetables or in lettuce wraps.
