Dry Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Wet Ingredients
- 1/2 cup unsalted butter, softened Make sure butter is at room temperature.
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons instant coffee granules For a stronger coffee flavor, increase the amount.
Add-ins
- 1 cup white chocolate chips Can substitute with dark chocolate for a richer taste.
Method
Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
- Add the egg and vanilla extract, mixing until combined.
- Dissolve the instant coffee granules in a small amount of hot water and add it to the mixture.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Fold in the white chocolate chips.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
