Ingredients

For the Chicken Fajitas

  • 2 lbs boneless, skinless chicken breasts
  • 1 piece bell pepper, sliced
  • 1 piece onion, sliced
  • 1 packet fajita seasoning For flavoring the chicken
  • 1 can diced tomatoes with green chilies
  • to taste Tortillas, for serving Use your favorite type
  • to taste Toppings (e.g., sour cream, cheese, avocado) Optional toppings for serving

Method

Cooking

  • Place the chicken breasts in the slow cooker.
  • Add the sliced bell pepper, onion, fajita seasoning, and diced tomatoes on top of the chicken.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
  • Shred the chicken with two forks and stir to mix with the vegetables and juices.
  • Serve in warm tortillas with your choice of toppings.
