Ingredients
For the Chicken Fajitas
- 2 lbs boneless, skinless chicken breasts
- 1 piece bell pepper, sliced
- 1 piece onion, sliced
- 1 packet fajita seasoning For flavoring the chicken
- 1 can diced tomatoes with green chilies
- to taste Tortillas, for serving Use your favorite type
- to taste Toppings (e.g., sour cream, cheese, avocado) Optional toppings for serving
Method
Cooking
- Place the chicken breasts in the slow cooker.
- Add the sliced bell pepper, onion, fajita seasoning, and diced tomatoes on top of the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
- Shred the chicken with two forks and stir to mix with the vegetables and juices.
- Serve in warm tortillas with your choice of toppings.

Notes
Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. For longer storage, freeze the fajita mix without tortillas for 2-3 months.
