Ingredients

Main Ingredients

  • 1 pound ground beef or turkey Choose between beef or turkey for a healthier option.
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (24 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup beef broth

Optional Toppings

  • shredded cheese For sprinkling on top.
  • sour cream For garnishing.
  • sliced avocado Adds creaminess.
  • chopped cilantro For freshness.

Method

Preparation

  • In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat, if necessary.
  • Transfer the cooked meat to the crockpot.
  • Add the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and beef broth to the crockpot. Stir to combine.

Cooking

  • Cover and cook on low for 6-8 hours, or on high for 3-4 hours.

Serving

  • Once cooked, stir the soup and serve hot with your choice of toppings.
