- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 4 cups beef broth
- 1 can diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Method
Preparation
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onions are translucent.
- Add the ground beef to the pot and cook until it’s browned. Drain excess fat if needed.
- Stir in the sliced carrots, diced potatoes, canned tomatoes, tomato paste, and beef broth.
- Season with dried thyme, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 to 40 minutes, until the vegetables are tender.
- Serve hot.

Notes
