  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onions are translucent.
  • Add the ground beef to the pot and cook until it’s browned. Drain excess fat if needed.
  • Stir in the sliced carrots, diced potatoes, canned tomatoes, tomato paste, and beef broth.
  • Season with dried thyme, salt, and pepper.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 to 40 minutes, until the vegetables are tender.
  • Serve hot.

Notes
