Flatbread Ingredients

  • 1 cup cottage cheese Use full-fat for a richer flavor.
  • 1 cup almond flour This keeps the bread low-carb.
  • 2 eggs eggs Large eggs are recommended.
  • 1 teaspoon baking powder
  • to taste Salt
  • to taste Pepper
  • optional garlic powder, onion powder, Italian seasoning Customize with your favorite herbs and spices.

Method

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine cottage cheese, almond flour, eggs, and baking powder. Stir until smooth.
  • Add salt and pepper, along with any optional herbs. Mix well.
  • Spread the mixture into a circle or rectangle, about 1/4 inch thick, on the prepared baking sheet.

Baking

  • Bake in the preheated oven for 15-20 minutes, until edges are golden and center is set.

Serving

  • Remove from the oven, let cool, and slice into wedges or squares.
  • Serve warm with dips, toppings, or as a wrap.
