- 1 lb ground beef or Italian sausage
Vegetable Ingredients
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 cups uncooked pasta (preferably lasagna noodles broken into pieces)
- 2 tsp dried oregano
- 2 tsp dried basil
- Salt and pepper to taste
Cheese Ingredients
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh parsley or basil for garnish
Method
Preparation
- In a large pot, cook the ground beef or sausage over medium heat until browned. Drain excess fat.
- Add the diced onion and minced garlic; sauté until the onion is translucent.
Cooking
- Stir in the crushed tomatoes, broth, uncooked pasta, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer until the pasta is cooked, about 10-12 minutes.
- Stir in the ricotta cheese and half of the mozzarella cheese until melted.
Serving
- Serve hot, garnished with the remaining mozzarella and fresh parsley or basil.
