Ingredients

Meat Ingredients

  • 1 lb ground beef or Italian sausage

Vegetable Ingredients

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups uncooked pasta (preferably lasagna noodles broken into pieces)
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • Salt and pepper to taste

Cheese Ingredients

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh parsley or basil for garnish

Method

Preparation

  • In a large pot, cook the ground beef or sausage over medium heat until browned. Drain excess fat.
  • Add the diced onion and minced garlic; sauté until the onion is translucent.

Cooking

  • Stir in the crushed tomatoes, broth, uncooked pasta, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer until the pasta is cooked, about 10-12 minutes.
  • Stir in the ricotta cheese and half of the mozzarella cheese until melted.

Serving

  • Serve hot, garnished with the remaining mozzarella and fresh parsley or basil.
