- 1-2 cups cottage cheese (low-fat or full-fat) Use according to preference.
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1 bell pepper, diced

- Salt and pepper, to taste
- 2 tablespoons olive oil or dressing of choice
Method
Preparation
- Start by grabbing a large mixing bowl. Scoop 1-2 cups of cottage cheese into the base.
- Dice your cucumber and bell pepper into bite-sized pieces. Slice the cherry tomatoes in half. Chop the red onion finely.
- Rinse your spinach or mixed greens. Dry them and roughly chop before adding to the bowl.
- Sprinkle salt and pepper over the mixture as you go.
- Drizzle olive oil or your dressing of choice over the salad. Gently toss the ingredients together.
- Use a fork to taste and adjust seasoning and dressing as needed.
- Serve the salad into individual bowls, adding extra veggies on top for presentation.
