Ingredients
Cod Marinade
- 4 filets Cod (about 1 inch thick)
- 1 tablespoon Extra virgin olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon Lemon zest
- 2 tablespoons Lemon juice
- 2 cloves Garlic (finely minced)
- 1 teaspoon Paprika
- 1 teaspoon Kosher salt
- 1 tablespoon Unsalted butter (optional, cut into small pieces)
- to taste Fresh parsley (for garnish)
Method
Preparation
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the olive oil, Dijon mustard, lemon zest, lemon juice, garlic, paprika, and kosher salt. Whisk until well blended.
- Place the cod filets on a baking sheet and coat each filet with the marinade.
- If using, place a dot of butter on top of each cod filet.
Baking
- Bake for 12-15 minutes or until the cod is opaque and flakes easily with a fork.
- Let the cod rest for a minute, then serve with lemon wedges and parsley.

Notes
Make sure the cod filets are centered on the baking sheet for even cooking. If you like a little heat, add some red pepper flakes to the marinade. Don't overcook the fish; keep an eye on it for that perfect flakiness!
