Ingredients

Cod Marinade

  • 4 filets Cod (about 1 inch thick)
  • 1 tablespoon Extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Lemon zest
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic (finely minced)
  • 1 teaspoon Paprika
  • 1 teaspoon Kosher salt
  • 1 tablespoon Unsalted butter (optional, cut into small pieces)
  • to taste Fresh parsley (for garnish)

Method

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine the olive oil, Dijon mustard, lemon zest, lemon juice, garlic, paprika, and kosher salt. Whisk until well blended.
  • Place the cod filets on a baking sheet and coat each filet with the marinade.
  • If using, place a dot of butter on top of each cod filet.

Baking

  • Bake for 12-15 minutes or until the cod is opaque and flakes easily with a fork.
  • Let the cod rest for a minute, then serve with lemon wedges and parsley.

Notes

Make sure the cod filets are centered on the baking sheet for even cooking. If you like a little heat, add some red pepper flakes to the marinade. Don't overcook the fish; keep an eye on it for that perfect flakiness!
