Method
Preparation
- In a blender or food processor, combine the cottage cheese, pumpkin puree, Greek yogurt, honey (or maple syrup), vanilla extract, pumpkin pie spice, and salt.
- Blend until smooth and creamy.
- Taste and adjust sweetness if necessary.
- Transfer to serving dishes and refrigerate for at least 1 hour to set.
- Serve chilled, garnished with additional pumpkin pie spice or a dollop of Greek yogurt if desired.
