- 1 tablespoon vegetable oil
- 2 tablespoons cocoa powder
- 1 box chocolate cake mix (for 9×13 pan)
- 7 tablespoons whipping cream
- 6 tablespoons honey
- 1 pinch sea salt
- 3 ounces unsweetened chocolate, finely chopped
- ½ cup unsalted butter, cubed
- 6 tablespoons confectioner's sugar
- ⅓ cup chocolate wafer crumbs
Decoration Ingredients
- to taste fresh mint sprigs
- to taste strawberries
- to taste blackberries
- as needed edible or faux spring flowers
Method
Preparation
- Brush the inside of terracotta pots with vegetable oil. Line them with parchment paper and dust with cocoa powder.
Baking
- Preheat the oven to 350°F. Prepare the chocolate cake mix according to the instructions on the box.
- Fill each pot two-thirds full with the batter. Clean the edges and place the pots on a baking sheet.
- Bake for 40-45 minutes or until a toothpick comes out clean. Then cool the pots on a wire rack.
Frosting
- For the frosting, heat the cream, honey, and salt in a small pot. Pour this mixture over the chopped chocolate and whisk until combined.
- Gradually add the butter, whisking until the mixture is smooth. Let it cool, then beat in the confectioner's sugar until well-mixed.
- Spread the frosting on the cooled cakes, sprinkle with chocolate wafer crumbs, and decorate with fresh fruit and flowers.
