Ingredients

Cake Ingredients

  • 1 tablespoon vegetable oil
  • 2 tablespoons cocoa powder
  • 1 box chocolate cake mix (for 9×13 pan)
  • 7 tablespoons whipping cream
  • 6 tablespoons honey
  • 1 pinch sea salt
  • 3 ounces unsweetened chocolate, finely chopped
  • ½ cup unsalted butter, cubed
  • 6 tablespoons confectioner's sugar
  • cup chocolate wafer crumbs

Decoration Ingredients

  • to taste fresh mint sprigs
  • to taste strawberries
  • to taste blackberries
  • as needed edible or faux spring flowers

Method

Preparation

  • Brush the inside of terracotta pots with vegetable oil. Line them with parchment paper and dust with cocoa powder.

Baking

  • Preheat the oven to 350°F. Prepare the chocolate cake mix according to the instructions on the box.
  • Fill each pot two-thirds full with the batter. Clean the edges and place the pots on a baking sheet.
  • Bake for 40-45 minutes or until a toothpick comes out clean. Then cool the pots on a wire rack.

Frosting

  • For the frosting, heat the cream, honey, and salt in a small pot. Pour this mixture over the chopped chocolate and whisk until combined.
  • Gradually add the butter, whisking until the mixture is smooth. Let it cool, then beat in the confectioner's sugar until well-mixed.
  • Spread the frosting on the cooled cakes, sprinkle with chocolate wafer crumbs, and decorate with fresh fruit and flowers.
