Method
Preparation
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the cottage cheese, eggs, shredded cheese, chopped vegetables, salt, pepper, and garlic powder.
- Blend the mixture until smooth using a blender or whisk.
- Grease a muffin tin with cooking spray or oil.
- Pour the egg mixture into the muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until the egg bites are set and lightly golden.
- Let cool for a few minutes, then remove from the tin.
- Serve warm and enjoy your fluffy breakfast bites!
