- 2 pieces Chicken breasts Diced, cooked chicken works well.
- 2 cups Onions Sliced for caramelization.
- 2 cups Rice Cooked rice.
- 1 cup Cream Heavy cream for richness.
- 1 cup Gruyère cheese or Swiss cheese Grated for topping.
- 2 tablespoons Butter For caramelizing the onions.
- 2 cups Chicken broth Low-sodium preferred.
- 1 teaspoon Salt Adjust to taste.
- 1 teaspoon Pepper Adjust to taste.
- 1 teaspoon Thyme Dried or fresh.
Method
Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, melt the butter over medium heat. Add sliced onions and cook until golden brown and sweet.
- In a large bowl, mix together cooked rice, caramelized onions, diced cooked chicken, cream, chicken broth, thyme, salt, and pepper.
- Pour the mixture into a greased baking dish. Top with grated Gruyère or Swiss cheese.
Baking
- Bake for 25-30 minutes, or until the cheese is melted and golden brown.
Serving
- Serve hot, and enjoy with a fresh salad or roasted vegetables.

Notes
