- 1 cup plain Greek yogurt (full-fat recommended for creamier texture)
- 1/2 cup creamy peanut butter (unsweetened, natural preferred)
- 2 tbsp maple syrup (or honey, adjust to taste)
- 1/2 tsp vanilla extract (pure)
Toppings
- 1/4 cup mini chocolate chips (optional)
- 1 tbsp chopped peanuts (for topping)
- 1 tsp flaky sea salt (for topping)
Method
Preparation
- In a bowl, combine the Greek yogurt, peanut butter, maple syrup, and vanilla extract. Stir until smooth and creamy. Adjust sweetness with more maple syrup if desired.
- If using, fold in the mini chocolate chips.
Forming and Freezing
- Line a baking sheet with parchment paper. Using a spoon or small ice cream scoop, drop spoonfuls of the mixture onto the parchment paper, shaping them into small round bites.
- Sprinkle chopped peanuts and flaky sea salt on top of each bite.
- Put the baking sheet in the freezer for about 2 to 3 hours, or until the bites are solid.
Storage
- Once frozen, transfer the bites to an airtight container or a resealable plastic bag. Place them back in the freezer for long-term storage.
