Ingredients
- 4 boneless skinless chicken breasts, cut into 2-inch cubes
- 200 g 7 oz fresh mozzarella or low-moisture mozzarella, cut into 1-inch cubes
- 4 cloves garlic minced
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp smoked paprika
- 1 tsp dried oregano or 1 tbsp fresh oregano
- 1 tsp salt
- ½ tsp black pepper
- 8 –10 wooden skewers soaked in water for 20 minutes
- Optional: lemon wedges fresh parsley or basil

- How to make Garlic Mozzarella Chicken Bomb Skewers at home

- 1. In a large bowl, combine olive oil, lemon juice, garlic, smoked paprika, oregano, salt, and pepper. Add chicken cubes and toss until coated. Cover and refrigerate for 30 minutes.
- 2. Pat chicken dry. Slice a small pocket into each cube and tuck a piece of mozzarella inside. Gently press to close.
- 3. Alternate chicken pieces with optional vegetables like cherry tomatoes or bell peppers on skewers.
- 4. Preheat grill to medium heat. Place skewers on grill and cook for 10–12 minutes, turning every 2–3 minutes until chicken reaches 165°F (74°C) and cheese is melted.
- 5. Transfer to a platter, sprinkle with fresh herbs, and serve hot with lemon wedges.
