  • 4 boneless skinless chicken breasts, cut into 2-inch cubes
  • 200 g 7 oz fresh mozzarella or low-moisture mozzarella, cut into 1-inch cubes
  • 4 cloves garlic minced
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp smoked paprika
  • 1 tsp dried oregano or 1 tbsp fresh oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 8 –10 wooden skewers soaked in water for 20 minutes
  • Optional: lemon wedges fresh parsley or basil

  • How to make Garlic Mozzarella Chicken Bomb Skewers at home
  • 1. In a large bowl, combine olive oil, lemon juice, garlic, smoked paprika, oregano, salt, and pepper. Add chicken cubes and toss until coated. Cover and refrigerate for 30 minutes.
  • 2. Pat chicken dry. Slice a small pocket into each cube and tuck a piece of mozzarella inside. Gently press to close.
  • 3. Alternate chicken pieces with optional vegetables like cherry tomatoes or bell peppers on skewers.
  • 4. Preheat grill to medium heat. Place skewers on grill and cook for 10–12 minutes, turning every 2–3 minutes until chicken reaches 165°F (74°C) and cheese is melted.
  • 5. Transfer to a platter, sprinkle with fresh herbs, and serve hot with lemon wedges.
