  • 4 pieces cod fillets
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup plain panko bread crumbs
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 2 tsp parsley, chopped
  • 1 piece lemon, zest only
  • 2 tbsp olive oil

Method

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Season the cod fillets with salt and pepper and place them on the prepared baking sheet.
  • In a bowl, mix together the grated Parmesan cheese, panko bread crumbs, minced garlic, Italian seasoning, chopped parsley, lemon zest, and olive oil.
  • Press the mixture firmly onto the cod fillets, covering them well.

Cooking

  • Bake in the preheated oven for about 12-15 minutes or until the cod is flaky and the crust is golden brown.
