Ingredients

For the Potatoes

  • 2 pounds small potatoes Choose waxy potatoes for best texture.
  • 4 tablespoons butter Unsalted butter recommended.
  • 4 cloves garlic, minced Adjust based on taste preference.
  • 1/2 cup grated Parmesan cheese Can substitute with other cheese if desired.
  • to taste Salt and pepper Season according to personal preference.
  • for garnish Fresh parsley, chopped Adds freshness to the dish.

Method

Preparation

  • Preheat your oven to 450°F (232°C).
  • Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool slightly.
  • Place the potatoes on a baking sheet lined with parchment paper.
  • Using the bottom of a cup or a fork, gently smash each potato until flattened.

Cooking

  • In a small saucepan, melt the butter and add the minced garlic, cooking until fragrant.
  • Drizzle the garlic butter over the smashed potatoes, then sprinkle with Parmesan cheese, salt, and pepper.
  • Bake in the preheated oven for about 20-25 minutes, until crispy and golden.
  • Garnish with fresh parsley before serving.
