  • 4 slices bacon Cook until crisp.
  • 1/2 cup onion, chopped Sauté in bacon grease.

  • 1 tablespoon sugar

Method

Preparation

  • Boil the potatoes in salted water until tender. Drain and let them cool slightly before slicing.
  • In a skillet, cook the bacon until crisp. Remove the bacon, crumble, and set aside.
  • In the same skillet, sauté the onion in the bacon grease until softened.
  • Stir in the vinegar, sugar, salt, and pepper, and heat until warm.
  • In a large bowl, combine sliced potatoes, bacon, and the vinegar mixture. Toss gently to coat.
  • Garnish with fresh parsley before serving.
