Method
Preparation
- Boil the potatoes in salted water until tender. Drain and let them cool slightly before slicing.
- In a skillet, cook the bacon until crisp. Remove the bacon, crumble, and set aside.
- In the same skillet, sauté the onion in the bacon grease until softened.
- Stir in the vinegar, sugar, salt, and pepper, and heat until warm.
- In a large bowl, combine sliced potatoes, bacon, and the vinegar mixture. Toss gently to coat.
- Garnish with fresh parsley before serving.
