Ingredients

Pasta Ingredients

  • 350 g protein pasta or pasta of choice Use any pasta you prefer.
  • 1 tbsp butter
  • 1/2 onion, chopped
  • 3 cloves of garlic, minced
  • 3 tbsp tomato paste
  • 1 cup light heavy/thickened cream
  • 1 tsp paprika
  • 1/2 tsp red chili flakes Adjust to spice preference.
  • 1/2 tsp black pepper
  • 1/3 cup reserved pasta water Important for sauce consistency.
  • 30 g mozzarella For topping.
  • 20 g parmesan For topping.

Method

Preparation

  • Cook the protein pasta according to package instructions. Reserve 1/3 cup of pasta water before draining.
  • In a pan, melt the butter over medium heat and sauté the onions until translucent.
  • Add garlic and cook until fragrant.

Cooking

  • Stir in the tomato paste, paprika, chili flakes, and black pepper.
  • Reduce the heat and mix in the light heavy cream. Allow it to simmer for a few minutes.
  • Add the reserved pasta water to achieve the desired creaminess.
  • Mix in the cooked pasta, and top with mozzarella and parmesan.

Serving

  • Serve warm and enjoy!

Notes
