Pasta Ingredients
- 350 g protein pasta or pasta of choice Use any pasta you prefer.
- 1 tbsp butter
- 1/2 onion, chopped
- 3 cloves of garlic, minced
- 3 tbsp tomato paste
- 1 cup light heavy/thickened cream
- 1 tsp paprika
- 1/2 tsp red chili flakes Adjust to spice preference.
- 1/2 tsp black pepper
- 1/3 cup reserved pasta water Important for sauce consistency.
- 30 g mozzarella For topping.
- 20 g parmesan For topping.
Method
Preparation
- Cook the protein pasta according to package instructions. Reserve 1/3 cup of pasta water before draining.
- In a pan, melt the butter over medium heat and sauté the onions until translucent.
- Add garlic and cook until fragrant.
Cooking
- Stir in the tomato paste, paprika, chili flakes, and black pepper.
- Reduce the heat and mix in the light heavy cream. Allow it to simmer for a few minutes.
- Add the reserved pasta water to achieve the desired creaminess.
- Mix in the cooked pasta, and top with mozzarella and parmesan.

- Serve warm and enjoy!

Notes
