Ingredients
For the cookie dough
- 1/2 cup softened butter Ensure it's room temperature
- 1/2 cup vegetable oil Can substitute with melted coconut oil
- 1 cup brown sugar Dark brown sugar can be used for richer flavor
- 1 each egg
- 1 tsp vanilla extract
- 2 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 1/2 cups all-purpose flour (325 grams)
For the streusel topping
- 1/4 cup softened butter Ensure it's room temperature
- 1/4 cup brown sugar
- 1/3 - 1/2 cup flour
- 1/2 tsp cinnamon
- a pinch salt
For the icing
- 1/2 cup powdered sugar
- 1 tbsp milk
- splash vanilla extract
Method
Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, vegetable oil, and brown sugar until light and fluffy.
- Beat in the egg and vanilla until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Making the streusel
- Combine softened butter, brown sugar, flour, cinnamon, and salt in a medium bowl until crumbly.
Baking
- Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
- Sprinkle the streusel topping over each dollop of cookie dough.
- Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
Icing
- Whisk together powdered sugar, milk, and vanilla until smooth.
- Drizzle the icing over cooled cookies before serving.

Notes
