Ingredients

For the cookie dough

  • 1/2 cup softened butter Ensure it's room temperature
  • 1/2 cup vegetable oil Can substitute with melted coconut oil
  • 1 cup brown sugar Dark brown sugar can be used for richer flavor
  • 1 each egg
  • 1 tsp vanilla extract
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 1/2 cups all-purpose flour (325 grams)

For the streusel topping

  • 1/4 cup softened butter Ensure it's room temperature
  • 1/4 cup brown sugar
  • 1/3 - 1/2 cup flour
  • 1/2 tsp cinnamon
  • a pinch salt

For the icing

  • 1/2 cup powdered sugar
  • 1 tbsp milk
  • splash vanilla extract

Method

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter, vegetable oil, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla until well combined.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Making the streusel

  • Combine softened butter, brown sugar, flour, cinnamon, and salt in a medium bowl until crumbly.

Baking

  • Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  • Sprinkle the streusel topping over each dollop of cookie dough.
  • Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.

Icing

  • Whisk together powdered sugar, milk, and vanilla until smooth.
  • Drizzle the icing over cooled cookies before serving.
