Ingredients

For the Cake

  • 2 cups gluten-free all-purpose flour Use a high-quality blend for best texture.
  • 1/2 cup sugar
  • 1/2 cup milk Can substitute with plant-based milk for dairy-free.
  • 1/4 cup unsalted butter, melted Can use vegan butter for dairy-free.
  • 2 large eggs
  • 1 packet active dry yeast
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

For Decoration and Icing

  • 1 cup powdered sugar
  • 2 tablespoons milk (for icing) Can substitute with plant-based milk for dairy-free.
  • Food coloring (purple, green, gold) For decoration.

Method

Preparation

  • In a small bowl, combine warm milk and yeast; let it sit for 5-10 minutes until foamy.
  • In a large mixing bowl, whisk together gluten-free flour, sugar, and salt.
  • In another bowl, mix melted butter, eggs, vanilla, and the yeast mixture.
  • Combine the wet ingredients with the dry, mixing until a dough forms.
  • Knead the dough gently on a floured surface, then shape it into a ball.
  • Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour.

Baking

  • Preheat the oven to 350°F (175°C).
  • Roll out the dough into an oval shape, add colored sugars in the center, and fold it over.
  • Shape the dough into a ring and place it on a greased baking sheet.
  • Let it rise for another 30 minutes.
  • Bake for about 25-30 minutes until golden brown.

Icing and Decoration

  • For icing, mix powdered sugar with milk until smooth, drizzling it over the cooled cake.
  • Decorate with colored sugars, forming a festive design.
