Ingredients

Main Ingredients

  • 4 pieces chicken thighs
  • 2 cups mixed vegetables (bell peppers, zucchini, red onion) Feel free to change based on preference.
  • 1/4 cup olive oil For marinating and cooking.
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 piece lemon juice Juice of 1 lemon.
  • Feta cheese for topping (optional)

Method

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, combine the chicken thighs, mixed vegetables, olive oil, minced garlic, oregano, thyme, salt, pepper, and lemon juice.
  • Toss everything to coat the chicken and vegetables well.
  • Spread the mixture out on a large sheet pan in a single layer.

Cooking

  • Bake for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.

Serving

  • If using, sprinkle feta cheese on top before serving.
  • Serve warm, pairing with rice or a simple salad, and optionally adding lemon wedges and warm pita bread.

Notes
