- 4 pieces chicken thighs
- 2 cups mixed vegetables (bell peppers, zucchini, red onion) Feel free to change based on preference.
- 1/4 cup olive oil For marinating and cooking.
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 piece lemon juice Juice of 1 lemon.
- Feta cheese for topping (optional)
Method
Preparation
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the chicken thighs, mixed vegetables, olive oil, minced garlic, oregano, thyme, salt, pepper, and lemon juice.
- Toss everything to coat the chicken and vegetables well.
- Spread the mixture out on a large sheet pan in a single layer.
Cooking
- Bake for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
Serving
- If using, sprinkle feta cheese on top before serving.
- Serve warm, pairing with rice or a simple salad, and optionally adding lemon wedges and warm pita bread.

Notes
