  • 2 medium sweet potatoes, diced
  • 1 medium zucchini, diced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Method

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until translucent.
  • Add ground turkey and cook until browned.
  • Stir in sweet potatoes, zucchini, cumin, paprika, salt, and pepper. Cook until vegetables are tender, about 10-15 minutes.
  • Transfer the mixture to a baking dish and sprinkle cheese on top.
  • Bake in the preheated oven for 20-25 minutes or until cheese is melted and bubbly.
  • Serve warm and enjoy your healthy dinner!
