  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup frozen corn
  • 1 cup green beans, chopped
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • Optional: shredded cheese for topping

Method

Cooking Instructions

  • In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  • Add the chopped onion, carrots, celery, and garlic, and sauté until vegetables are tender.
  • Stir in the beef broth, diced tomatoes, corn, green beans, Italian seasoning, salt, and pepper.
  • Bring to a boil, then reduce heat and let simmer for about 20 minutes.
  • Serve hot, and top with shredded cheese if desired.
