Ingredients

For the dough

  • 1 cup whole wheat flour
  • 1/2 cup coconut sugar
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 2 tbsp melted coconut oil

For coating

  • Cinnamon sugar for coating

Method

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, mix the flour, coconut sugar, baking powder, cinnamon, and salt together.
  • In a separate bowl, combine the applesauce, almond milk, vanilla extract, and melted coconut oil.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Scoop the batter using a small cookie scoop or tablespoon onto the prepared baking sheet, spacing them apart.

Baking

  • Bake for 10-12 minutes until golden brown.
  • Allow to cool slightly before rolling in cinnamon sugar.

  • Serve warm and enjoy guilt-free!
