Ingredients

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/3 cup honey or maple syrup Can substitute with agave nectar.
  • 1/4 cup unsweetened applesauce Can be replaced with mashed bananas or yogurt.
  • 1 teaspoon vanilla extract For enhanced flavor.

Main Ingredients

  • 1 cup grated carrots Make sure to grate finely for better texture.
  • 1/4 cup raisins or nuts Optional mix-ins.

Method

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix together the rolled oats, whole wheat flour, baking soda, cinnamon, nutmeg, and salt.
  • In a separate bowl, combine the honey (or maple syrup), applesauce, and vanilla extract until well blended.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Stir in the grated carrots and raisins or nuts if using.
  • Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 12-15 minutes, or until the edges are lightly golden.
  • Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
