  • 2 cups low-fat cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped vegetables (bell peppers, onions, mushrooms)
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup pepperoni slices (optional) Can be skipped for a vegetarian option
  • 1/2 cup chopped fresh basil (for garnish) Adds a fresh flavor

Method

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the cottage cheese, mozzarella cheese, Parmesan cheese, chopped vegetables, marinara sauce, and Italian seasoning.
  • Season with salt and pepper to taste and mix well.
  • Spread the mixture into a greased baking dish.
  • If using, add pepperoni slices on top.

Baking

  • Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool slightly before serving.
  • Garnish with chopped fresh basil before serving.
