Ingredients

For the cheesecake filling

  • 1.25 cups cottage cheese Ensure it's well-blended for a smooth texture.
  • 1 cup fat-free cream cheese Can substitute with regular cream cheese for a richer flavor.
  • 0.5 cups vanilla protein powder Experiment with different flavors for a unique twist.
  • to taste sugar-free maple syrup Adjust according to sweetness preference.

For the crust

  • 6 pieces graham crackers or crumbs Can be substituted with nut-based crumbs for a gluten-free option.
  • 1 tbsp melted butter Used to bind the graham cracker crumbs.

For the toppings

  • fresh fruit or jam Fresh berries, bananas, or peaches work best.

Method

Preparation

  • In a blender, combine the cottage cheese, cream cheese, protein powder, and sugar-free maple syrup. Blend until smooth.
  • Crush the graham crackers into fine crumbs and mix with the melted butter.
  • Press the graham cracker mixture into the bottoms of each jar.
  • Spoon the cheesecake filling over the crust in each jar.
  • Refrigerate the jars for 1 to 2 hours.
  • Once chilled, top with fresh fruit or your favorite jam and serve.
