Main Ingredients

  • 5 pieces strawberries, hulled Use fresh, ripe strawberries for the best flavor.
  • 1/2 cup peanut butter Alternatives: almond butter or cashew butter.
  • 1/4 cup coconut oil, melted Can substitute with melted butter.
  • 2 tablespoons honey or maple syrup Adjust sweetness to taste; maple syrup makes it vegan.
  • 1/4 cup dark chocolate chips (optional) Optional for drizzling on top.

Method

Preparation

  • In a bowl, mix the melted coconut oil, peanut butter, and honey (or maple syrup) until smooth.
  • Line a mini muffin tin with liners.
  • Pour a small amount of the peanut butter mixture into the bottom of each muffin cup.
  • Place a hulled strawberry in each cup and cover with more peanut butter mixture until filled.
  • If using, melt the dark chocolate chips and drizzle over the top.
  • Freeze for at least 1 hour until solid.

Notes
