Method
Preparation
- In a large bowl, combine the corn, Greek yogurt, red bell pepper, red onion, and cilantro.
- Squeeze the lime juice over the mixture and season with salt and pepper.
- Stir well to combine all ingredients.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
