  • 1 cup cooked and mashed sweet potatoes
  • 1/2 cup nut butter (peanut or almond)
  • 1/3 cup honey or maple syrup For sweetness adjustment
  • 1/2 cup cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • a pinch salt
  • 1/2 cup chocolate chips (optional)

Method

Preparation

  • Preheat your oven to 350°F (175°C) and grease a baking pan.
  • In a large bowl, combine the mashed sweet potatoes, nut butter, honey or maple syrup, and vanilla extract. Mix well until smooth.
  • Add the cocoa powder, baking powder, and a pinch of salt. Stir until all ingredients are combined.
  • If using, fold in the chocolate chips.
  • Pour the batter into the greased baking pan and spread it evenly.

Baking

  • Bake for 20-25 minutes, or until a toothpick comes out clean.
  • Allow the brownies to cool before cutting them into squares and serving.

Notes
