Ingredients

For the Meatballs

  • 1 lb ground beef
  • 1 large egg
  • 1.5 cups Gruyere or Swiss cheese, shredded
  • 0.25 cups Parmesan cheese, grated
  • 0.5 cups breadcrumbs (plain or seasoned)
  • 2 tbsps milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp dried thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper

For the Onion Sauce

  • 2 tbsps unsalted butter
  • 2 large yellow onions, thinly sliced
  • 2 tsps sugar
  • 1 tsp salt
  • 3 cups beef broth
  • 0.5 tsp dried thyme
  • 2 tsps Worcestershire sauce
  • 1 tbsp cornstarch
  • 1 tbsp water

Method

Meat Preparation

  • In a mixing bowl, combine ground beef with breadcrumbs, Parmesan, egg, milk, and spices. Mix gently without overworking to keep the meatballs tender.

Meatball Formation

  • Shape the mixture into uniform meatballs about one inch in diameter. Be gentle to ensure they remain soft.

Crock Pot Setup

  • Lightly spray the inside of your slow cooker with cooking spray. Place the meatballs in a single layer.

Onion Sauce Creation

  • Melt butter in a pan and add the sliced onions. Cook them until they turn a deep golden-brown, enhancing the flavor.

Cooking Process

  • Pour the caramelized onions and beef broth over the meatballs, making sure they are fully covered.

Slow Cooking

  • Cover the slow cooker and set it on low heat. Let the meatballs cook for several hours until they are tender and infused with the sauce's flavors.

Finishing Touch

  • In the last 30 minutes of cooking, sprinkle extra Parmesan cheese on top for a delicious melted crust.

Serving

  • Carefully transfer the meatballs to a platter and drizzle the remaining onion sauce over them for a beautiful presentation.
