Pineapple and Oil
- 1 whole Fresh pineapple (sliced into rings) Make sure the rings are well-drained.
- 2 cups Vegetable oil (or canola/coconut oil) For frying the fritters.
- 1 tablespoon Additional cinnamon and sugar (to taste) For sprinkling on top of the fritters after frying.
Method
Preparation
- In a mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk the egg and milk together. Add this mixture to the dry ingredients and stir until just combined.
- Heat the vegetable oil in a deep pan over medium heat.
Cooking
- Dip each pineapple ring into the batter, ensuring it is well-coated.
- Carefully place the batter-coated pineapple into the hot oil. Fry until golden brown on both sides, about 2-3 minutes each side.
- Remove the fritters and let them drain on paper towels.
Serving
- Mix the additional sugar and cinnamon in a small bowl and sprinkle over the warm fritters.
