Method

Preparation

  • Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  • In a blender or food processor, combine the black beans, eggs, cocoa powder, honey (or maple syrup), almond butter, vanilla extract, baking powder, and baking soda. Blend until smooth and well combined.
  • Stir in chocolate chips if desired.
  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Baking

  • Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
