- 1 whole bell pepper, chopped Any color works.

Method
Preparation
- In a large bowl, mix together the shredded chicken, cottage cheese, cooked rice, enchilada sauce, corn, and bell pepper.
- Season with salt and pepper to taste.
- Divide the mixture into serving bowls and top with shredded cheese.
- Place the bowls in the microwave for 2-3 minutes or until cheese is melted.
- Garnish with fresh cilantro before serving.
