  • 1 piece low-carb tortilla
  • 0.5 cup Greek yogurt For creaminess and protein
  • 2 wedges Laughing Cow cheese Use any flavor you prefer
  • 1 cup cooked chicken, shredded Can use rotisserie chicken for convenience
  • 1 tablespoon ranch seasoning For flavor
  • as needed spray/oil Cooking spray or oil for cooking To prevent sticking

Method

Preparation

  • In a bowl, mix Greek yogurt, ranch seasoning, and shredded chicken until well combined.
  • Spread the chicken mixture over one half of the low-carb tortilla.
  • Add the Laughing Cow cheese on top of the chicken mixture.
  • Fold the tortilla over to enclose the filling.

Cooking

  • Heat a skillet over medium heat and add cooking spray or oil.
  • Cook the quesadilla for 3-4 minutes on each side, or until golden brown and crispy.
  • Remove from skillet, slice, and serve warm.
