Method
Preparation
- In a bowl, mix Greek yogurt, ranch seasoning, and shredded chicken until well combined.
- Spread the chicken mixture over one half of the low-carb tortilla.
- Add the Laughing Cow cheese on top of the chicken mixture.
- Fold the tortilla over to enclose the filling.
Cooking
- Heat a skillet over medium heat and add cooking spray or oil.
- Cook the quesadilla for 3-4 minutes on each side, or until golden brown and crispy.
- Remove from skillet, slice, and serve warm.
