Ingredients
For the Chicken
- 4 pieces boneless, skinless chicken breasts
- 1 cup honey BBQ sauce Store-bought or homemade
For the Potatoes
- 2 pounds baby potatoes, halved
- 1/4 cup grated Parmesan cheese
- 2 tablespoons minced garlic
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Method
Preparation
- Preheat the grill or oven to medium-high heat.
- In a bowl, combine honey BBQ sauce with the chicken breasts. Let it marinate for at least 30 minutes.
- In another bowl, mix the halved potatoes, olive oil, garlic, Parmesan cheese, salt, and pepper.
Cooking
- Place the seasoned potatoes in a baking dish or on a grill basket.
- Grill or roast the chicken for about 6-7 minutes on each side, or until fully cooked.
- In the last 15 minutes of cooking, add the potatoes to the grill or bake them until golden brown and tender.
- Serve the chicken topped with additional BBQ sauce and the potatoes on the side, garnished with fresh parsley.
