Ingredients

  • 8 cups (1.9 L) apple cider or 100% apple juice (unfiltered if possible)
  • 1 orange, sliced (seeds removed)
  • 2–3 cinnamon sticks
  • 6–10 whole cloves (in an infuser or tea bag)
  • 1–2 star anise (optional)
  • 4–6 slices fresh ginger
  • 1 pinch kosher salt
  • 1–3 Tbsp maple syrup or brown sugar, to taste
  • 1/2–1 tsp vanilla extract, added off heat

Method

  • Combine cider, orange, cinnamon, cloves, star anise (optional), ginger, and salt in a pot.
  • Bring to a bare simmer over medium heat; cook 15–20 minutes without boiling.
  • Remove spices and orange slices; sweeten to taste with maple syrup or brown sugar, then stir in vanilla off heat.
  • Serve hot and garnish as desired, or keep warm for serving.

Notes

Crockpot: High 1–2 hrs or Low 2–3 hrs; switch to Warm.
DIY from Apples: Simmer 3 lb apples + 8 cups water with spices/orange 45–60 min; mash; simmer 15 min; strain; sweeten; vanilla off heat.
Hot Hard Cider: Warm equal parts bottled hard cider + regular cider with spices; add bourbon or rum off heat.
