Method

Preparation

  • Beat cream cheese and butter together until smooth.
  • Add the confectioners’ sugar and vanilla extract; mix well until combined.
  • Gently fold in the shredded coconut.
  • Roll the mixture into small oval shapes.
  • Roll each oval in ground cinnamon until coated.
  • Chill the formed Irish potatoes in the refrigerator for 30 minutes before serving.
