- 4 cups confectioners’ sugar

- 2½ cups shredded coconut Use sweetened coconut flakes for a stronger flavor.
- 1 tbsp ground cinnamon
Method
Preparation
- Beat cream cheese and butter together until smooth.
- Add the confectioners’ sugar and vanilla extract; mix well until combined.
- Gently fold in the shredded coconut.
- Roll the mixture into small oval shapes.
- Roll each oval in ground cinnamon until coated.
- Chill the formed Irish potatoes in the refrigerator for 30 minutes before serving.

Notes
