  • 4 ounces Italian sausage
  • 4 slices bacon, chopped
  • 1 can (15 ounces) cannellini beans, rinsed and drained
  • 2 cups fresh spinach
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil (optional) For cooking the bacon

Method

Preparation

  • In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside.
  • In the same pot, add the Italian sausage and cook until browned.
  • Add the chopped onion and minced garlic, cooking until the onion is translucent.
  • Stir in the cannellini beans, chicken broth, and dried oregano. Bring to a simmer.
  • Add the fresh spinach and cooked bacon back into the pot. Season with salt and pepper to taste.
  • Simmer for about 10 minutes, allowing flavors to meld.
  • Serve warm.

Notes
